Welcome to my world of cooking and food handling!!

 

It always gave me ineffable happiness when I see children of any age feast on any kind of food. Somehow, that encouraged me to look deep into the world of food and the techniques in food handling and food production.

As per WHO reports, 420,000 human lives are lost every year because of contaminated food. Children under 5 years of age are at particularly high-risk as around 125,000 children die every year due to foodborne deceases.

​

Infections caused by contaminated food have a much higher impact on populations with poor or fragile health status and can easily lead to serious illness and death. For infants, pregnant women, the sick and the elderly, the consequences are usually more severe and may be fatal.

​

Overuse and misuse of antimicrobial in agriculture and animal husbandry, in addition to human clinical uses, is one of the factors leading to the emergence and spread of anti- microbial resistance. They transmit to humans through food.

Food contamination has far reaching effects beyond direct public health consequences. It undermines food export, tourism, livelihood of food handlers, and economic development, both in developed and developing countries.

​

To ensure food safety, a multitude of different professionals should work together, making use of best available science and technologies. Food safety is a shared responsibility between governments, industry, producers, academia and consumers. Everyone has a role to play. Achieving food safety is a multi-sectoral effort requiring expertise from a range of different disciplines. Toxicology, microbiology, parasitology, nutrition, health economics, and human and veterinary medicine. Local communities, women's groups, and school education also play an important role.

I am an accountant and managing partner of a construction company in USA and I and  a professionally-trained American Food Safety certified Chef & Baker from Oklahoma City, Oklahoma, USA. I am very proud to say that I am originally from the God's Own Country - Kerala, India. It is my wish to share what I know about different dishes from all over the world and how they are made along with food handling and food safety.

Bread is one of the oldest man-made foods. It is prepared from a dough of flour and water, usually by baking. Throughout recorded history it has been a prominent food in large parts of the world, and plays an essential role in religious rituals and secular culture. There are hundreds of ways we can make breads by incorporating various types of grains and various methods to make them.

Cakes

Cake is often served as a celebratory dish on ceremonial occasions.In their oldest forms, cakes were modifications of bread.  Now a days now cover a wide range of preparations that can be simple or elaborate, and that share features with other desserts.Cake making is no longer a complicated procedure; while at one time considerable labor went into cake making (particularly the whisking of egg foams), baking equipment and directions have been simplified so that even the most amateur of cooks may bake a cake.

Rice

            Rice is the most important food crop in the world and is a central part of many cultures, traditions, customs and spirituality. It is considered unique because it is produced in a wide range of locations and under a wide variety of climatic conditions that other crops cannot survive in. They are nutritional staple food which provides instant energy as their most important component is carbohydrates. They can serve as a good source of vitamins, iron, manganese and magnesium. There are a lot of different types of rices and so many ways to cook it.

Eggs

Eggs are exceptionally nutritious, protein rich food with all essential amino acids. Eggs may be used as a potential natural source of antioxidant that could prevent humans from a large number of degenerative processes. Chicken eggs are widely used in many types of dishes, both sweet and savory, including many baked goods. Egg yolks are an important emulsifier in the kitchen and are also used as a thickener. Eggs come in different varieties and they can be cooked in a multitude of different ways. Fried eggs, scrambled eggs, omelets, poached eggs and boiled eggs are a few of the most popular cooking methods which highlight their versatility.

Poultry

Poultry are domesticated birds kept by humans for their eggs, their meat or their feathers. Chicken, turkey, duck, goose, pigeon, guinea fowl comes under this general term. Because of their high quality protein content, poultry meat is considered as a very attractive food all over the world. All poultry meat should be properly handled and sufficiently cooked in order to reduce the risk of food poisoning.

 A spice is a seedfruitrootbark, or other plant substance primarily used for flavoring or coloring food. Spices are distinguished from herbs, which are the leaves, flowers, or stems of plants used for flavoring or as a garnish. The taste of the food can be considerably enhanced by using proper quantity, combination and engaging the correct preparation process of spices.

A beverage (or drink) is a liquid intended for human consumption. In addition to their basic function of satisfying thirst, drinks play important roles in human culture. Common types of drinks include plain drinking watermilkcoffeeteahot chocolatejuice and soft drinks and alcoholic drinks.  Here, we will be discussing several non-alcoholic drinks and their preparation

Shellfish is a colloquial and fisheries term for exoskeleton bearing aquatic invertebrates used as food, including various species of molluscscrustaceans, and echinoderms. Although most kinds of shellfish are harvested  from saltwater environments, some are found in freshwater. In addition, a few species of land crabs are also eaten, for example Cardisoma guanhumi in the Caribbean. Despite the name, shellfish are not actually fish, but are simply water-dwelling animals. Shellfish are among the most common food allergens and needed to be handled very carefully.
